Because you must value Bitcoin IN SOMETHING OTHER THAN BITCOIN for it to have any exchange value whatsoever. It is not a standalone unit of account. When you "price things in Bitcoin" you are pricing both items IN DOLLARS and doing an extra math step to *convert it* into BTC terms using that common measurement. No matter what, in all instances, you are still using the same unit of account of all things: fiat. Because that's how the economy functions today.
All this ideological posturing about how bad dollars are as a monetary device really don't mean anything in this context. There must be a shared unit of measurement between BTC and other things, or else you cannot exchange it for dick squat.
Try to buy something, anything on earth, without any reference to its fiat denominated value. Offer to buy a house for 100 sats. Make sure you take a photo of the person's face when you say it because I want to see.(𝐓𝐗𝐌𝐂)
